Best Gluten Free Blondie Brownies EVER

There are many variations of gluten free brownies circulating out in the world wide web, but we believe we've got the best gluten free blondie brownie ever. And they're made with....chickpeas! Naturally gluten free and protein packed, these brownies are super simple and absolutely D-licious. Soft, chewy, and totally appropriate to eat for breakfast. You can adjust the sweetness by adding more maple syrup and chocolate chips to taste, but this is our go-to recipe.

Chickpea Blondie Brownie Recipe

Ingredients:
  • 1 can chickpeas

  • 1/2 cup almond butter

  • 1/3 cup maple syrup 

  • 2 tsp vanilla extract

  • 1/4 tsp baking powder

  • 1/4 tsp baking soda

  • Pinch of salt

  • 1/3 cup dark chocolate chips 

Directions: 

Preheat your oven to 350. Drain and rinse the chickpeas. Add all ingredients to food processor (except chocolate chips) and blend until smooth, then stir in chocolate chips. Spray an 8x8 dish with baking spray and spread mixture evenly. *Optional, save a handful of chips or add a few extra on top once it's in the pan before baking. Bake for 40 minutes.
